  1. Whisk egg whites until soft peaks
  2. Gradually add sugar until meringue is thick + glossy
  3. Add cornflour, vinegar and vanilla, whisk until combined.
  4. Place Wet brown paper bag over inverted cake tin and pile meringue on top. Use spatula to spread over lid.
  5. Put into hot oven (200°C), turn oven down to 120c + cook steady for 1 hrs. until outer crust is hard.
