Christmas Madeleines

  1. Preheat the oven to 200C/400F/Gas 6.
  2. Whisk together all the ingredients, using both the zest and the juice from both the lemon and clementine. Butter the madeleine or similar cake tray and dust with a little flour.
  3. Pop into the oven for 8-10 minutes or until the cakes are starting to turn golden brown on the top. Once cooled place on a plate, ours never even hang around that long to cool!
