Chicken Fillets with Mango Chutney Glaze
Ingredients
- 6 chicken thighs or breasts
- 1 tbs apricot jam
- 1 tbs mango chutney
- 1/2 cup mayonnaise
- 1 tsp Worcestershire sauce
- 2 tsp wholegrain mustard
- 1 tbs lemon juice (optional)
Instructions
- Pound chicken fillets lightly with a mallet and place in a shallow dish if using breast.
- Mix together remaining ingredients and pour over chicken.
- Allow to marinate in fridge for several hours, or overnight.
- Barbeque until chicken is cooked through.
